Watermelon and Feta Salad

The summer is in full thrall, and one of our favorite ways to enjoy it is to munch on the plethora of  seasonal fruit that it brings. But what if you’re craving something that isn’t fully sweet? What if you’re more into the ‘sweet and savory’ combos? Thankfully many fruits pair amazingly well with savory ingredients, but one that is often overlooked is watermelon. 

Watermelon is amazing on its own and provides a high amount of vitamins C and A, while also being high in antioxidants. But why not try spicing it up a bit? Like many fruits, the simple complimentary ingredients of a light balsamic glaze and feta, bring an invigorating twist to the party!

Balsamic glaze is a reduction made from balsamic vinegar, and when used in moderation and with little added sugars, can help lower cholesterol. Balsamic vinegar is made through the process of fermenting grapes, and retains a high amount of antioxidants and polyphenols. 

Feta is also a favorite of ours, as it’s an easy and deliciously tangy way to include more lactobacillus strain probiotics into your diet! 

Watermelon and Feta Salad

Tools Needed:

  • A cutting board
  • A sharpened knife 
  • A medium sized bowl for mixing and serving

Ingredients Needed:

  • 4 cups of seedless cubed watermelon
  • 1 cup crumbled feta cheese
  • 2 tbsp extra virgin olive oil
  • Ground salt and pepper, to taste
  • ¼  cup balsamic glaze
  • ¼ cup fresh mint leaves
  • ¼ cup crushed pistachios (Optional)

Instructions: 

  1. If not already prepped, cut watermelon into cubed, bite sized chunks and add to the bowl.
  2. Sprinkle the crumbled feta cheese over watermelon.
  3. Thinly chop the mint leaves, and add to the mix. 
  4. Drizzle olive oil over the mix and lightly toss until every piece is nicely coated.
  5. Garnish with a drizzle of balsamic glaze, and lightly with salt and pepper. Sprinkling in crushed pistachios also gives the mix a nice savory crunch.
  6. Allow to chill in the fridge for a few minutes to let flavors blend together and serve!

Note: Garnishes can be kept on the side for individual serving preferences.
