Chicken and Roasted Balsamic Strawberries With Whipped Feta

As mid-spring approaches, we are itching to dive into all those sweet, sweet early summer flavors. Bring on those berries, peaches, and delectable finger foods fit for picnics!


This week we’re giving some love to feta cheese, a perfect pairing for all things sweet and savory, but did you know that feta cheese is also rich in probiotics? This is because, like many hard cheeses, feta goes through a fermentation process in which the lactic acid bacteria is combined with the milk of sheep or goats. The particular probiotic bacteria that forms from this process is called Lactobacillus Plantarum, and can also help to maintain your overall gut health! 


Below is our favorite recipe for Chicken and Roasted Balsamic Strawberries with Whipped Feta. It’s not only a very simple and easy snack to whip up for garden parties, but the whipped feta, mixed with greek yogurt, is a double whammy of helpful bacteria for your gut!

Chicken and Roasted Balsamic Strawberries With Whipped Feta 

Ingredients:

Produce

  • • Fresh Basil
  • • 2 lbs Strawberries, fresh

Condiments

  • • 2 tbsp Balsamic vinegar
  • • 2 tsp Honey
  • 1 tbsp minced garlic

Baking & Spices

  • • 1 Black pepper

Oils & Vinegars

  • • 2 tbsp Olive oil

Bread & Baked Goods

  • • 1 Bread, Crusty

Dairy

  • • 8 oz Feta cheese
  • • 1/2 cup Greek yogurt, plain

Instructions:

Making the Whipped Feta:

1. Add feta cheese, greek yogurt, olive oil, garlic, and black pepper into a food processor.

2. Blend until smooth and scrape down with a spatula as needed.

3. Chill in the fridge for around 30 minutes while your strawberries roast.


Roasting the Strawberries:

1. Preheating oven to 350F.

2. Wash, dry, and remove stems from strawberries. Slice each berry in halves or quarters (depending on size).

3. In a separate medium sized bowl, combine balsamic vinegar and honey. Whip until combined.

4. Add sliced strawberries to the bowl and toss until evenly coated.

5. Spread the berries evenly on a lined baking sheet.

6. Roast for about 30-35 minutes. You’ll notice them begin to soften and release their juices when done.

7. Allow them to cool slightly, before transferring to a container for storage. Be sure to not leave any of the excess juices behind.


Spread whipped feta and strawberries on your bread of choice and garnish with fresh basil!
