Baked Parmesan Zucchini Chips

In a world where everything is deep fried with refined oils and packed with copious amounts of saturated fats, it can be hard to curb those temptations and cravings for foods that do little to nothing beneficial for our bodies, but thankfully it’s not impossible! It’s all just a matter of getting creative and open to alternatives! 


Let’s use french fries and chips as an example. While undeniably tasty and technically made from potatoes, they offer us next to nothing in nutritional value. What benefits their original form could give as, has been absolved with ridiculously high amounts of sodium and pro-inflammatory ingredients such as processed vegetable and seed oils that take an incredibly deadly toll on our blood pressure.

Baked Parmesan Zucchini Chips


Ingredient:

  • 2 medium sized Zucchinis
  • ¼ cup Quinoa Flour (packed in protein and allergy free!)
  • ¼ cup finely grated parmesan cheese
  • 1 tbsp Italian seasoning 
  • 1 tsp garlic powder
  • 3 tbsp virgin olive oil

Topping: ¼ cup shredded parmesan cheese


Tools Needed:

  • 1 backing sheet (with cooling rack)
  • Tin foil 
  • Bowls and spoons for mixing.
  • Paper towels


Instructions:

1. Preheat the oven to 425 degrees.
2. Wash zucchinis and slice thinly. About 3 centimeters thick.
3. Lay out slices on paper towels and press lightly on each side to remove excess moisture. 
4. Lightly toss slices with olive oil in a bowl.
5. In a separate bowl combine dry ingredients until fully incorporated. 


6. Place tin foil in between the cooling rack and sheet pan for easy clean up!
7. Coat each zucchini piece evenly with the flour and cheese powder and place on rack.


8. Sprinkle shredded parmesan cheese onto each slice in small mounds and bake for 40 minutes.
9. Seve immediately with ranch dressing or your side of choice!
