Chocolate and Peanut Butter Protien Blondies

It’s hard to beat a good fudgy and flavorful blondie, but have you ever thought about how a blondie could actually be a treat that’s also beneficial for you? This blondie recipe is simple and turns the traditional snack into a delectable slice of fiber and protein. 

Chocolate and Peanut Butter Protien Blondies

Equipment Needed:


- A standard 9x9 baking pan (I made due with a pie dish)
- Parchment paper
- 1 medium mixing bowl
- Food processor 
- Rubber spatula

Ingredients:


- 1 ½ cup Canned Chickpeas - or 1 can chickpeas (14 oz)
- ⅓ cup Unsweetened Peanut Butter
- ½ cup Honey
- ½ tablespoon Vanilla Extract
- ¼ teaspoon Baking Powder
- ¼ teaspoon Baking Soda
- ½ teaspoon Sea Salt
- ⅓ cup Almond or Oat flour
- ⅓ cup Dark Chocolate Chips


Instructions:

1. Preheat the oven to 350 degrees.
2. Drain chickpeas and set aside on a plate and paper towel. Blot until dry. Too much excess water will make the blondies too crumbly and fragile.
3. Add all ingredients (except chocolate chips and flour) in the food processor and gently pulse until smooth.
4. Add flour and pulse again until fully mixed.
5. ransfer batter to the mixing bowl using the rubber spatula.
6. Gently fold in chocolate chips.
7. Line your pan with parchment paper and spread batter evenly.
8. Bake for 20-30 minutes or until the top looks browned and crispy. If you insert a knife or tooth pick to the center, it should still come out clean.
9. Let cool for at least 1 hour and enjoy!
