Pumpkin Spice Protien Bites
Autumn has dawned and absolutely NO ONE is immune to the temptation of all things pumpkin and spiced! But perhaps, you'd prefer to start your mornings without a muffin or shot of syrup? Perhaps a simple bite of whole foods is just enough to start your day and also indulge in the flavors of the season? This iconic winter squash is an excellent source of fiber, vitamins, as well as the spices!
This recipe for Pumpkin Spice Protein Bites, is a personal favorite of mine that's like taking a bite of pumpkin pie pre-workout in the morning!
Ingredients:
- 1 cup peanut butter
- 1/2 cup pumpkin puree
- 1 teaspoon vanilla extract
- 1/2 cup honey
- 1 1/2 cups rolled or old fashioned oats
- 1/4 cup chia seeds
- 1 tbsp pumpkin pie spice
- 1/2 cup dark chocolate chips
Instructions:
- Add the peanut butter, pumpkin purée, honey, and vanilla extract to a mixing bowl and use a wooden spoon or spatula to stir until well combined.
- Next, add oats, chia seeds, chocolate chips, and pumpkin pie spice to the bowl. Stir until everything is well combined and you have a “dough” like consitancy.
- Place the mixture in the freezer for at least an hour to firm up.
- Remove the dough from the fridge and use a spoon to scoop the dough and roll into balls. Store the bites in an air-tight container in the fridge for up to five days.
