Coco and Cocoa Granola
We love granola in our house and eat it almost daily, but we finally got to a point where we wondered, ‘For such simple ingredients, why is it always so expensive and almost always full of added refined sugars?’ So naturally the simple solution was to just start making it ourselves! Granola can be a simple and easy addition to your diet and it’s a customizable recipe that can be fancied up with any nuts, seeds, or dried fruit of your choosing!
This recipe is a personal favorite of mine that’s perfect for the warmer months and also makes your house smell amazing all day after baking!
Coco and Cocoa Granola
Materials needed:
- 2 Baking sheet pans
- Parchment paper
- A large mixing bowl
- A rubber spatula
Ingredients:
- 3 cups of old fashioned oats
- ⅔ cup of crushed pistachios
- ⅔ cup shredded coconut
- 1 cup honey
- ½ cup coconut oil
- 1 tsp vanilla extract
- ½ cup raw cocoa powder
- 1 tsp sea salt
Instructions:
1. Preheat the oven to 325 degrees and prep your baking sheets with parchment paper.
2. Melt coconut oil in the microwave. You should only need about 20 seconds.
3. In your mixing bowl, whisk together coconut oil, honey, vanilla extract, and cocoa powder.
4. Begin folding in old fashioned oats, crushed pistachios, and shredded coconut until evenly coated.
5. Spread mixture flat on to one of the baking sheets and sprinkle with sea salt.
6. Bake for 10 minutes. Using the other baking sheet, quickly flip the granola and bake for another 10.
7. Allow to fully cool before using your hands to break apart to your preferred cluster size and store in an air tight bag or container. Enjoy!
