Chocolate Protein Truffles
Need a pre-workout snack, or maybe just a decadent bite to satisfy your sweet tooth? What not both? This recipe for Chocolate Protein Truffles is easy and an effective way to get just a little more plant fiber and protein in your diet!
Chocolate Protein Truffles
Materials Needed:
- Food processor
- Spoon for scooping
- Bowl for shredded coconut
- Bowl to soak dates
- Plate to set
Ingredients:
- About half a can chickpeas (drained and dried)
- 4.2 oz dates (about 5-6)
- 2 tbsp cocoa powder
- 2 tbsp peanut butter
- Pinch of salt
- 2 tbsp honey
- 1 cup shredded coconut
Instructions:
1. Soak dates in a bowl of warm water for about 10 minutes. This will make them blend easier.
2. Add the chickpeas, dates, cocoa powder, peanut butter, salt, and honey to your food processor and pulse until smooth.
3. Chill the mixture in the fridge for at least 20 minutes.
4. Prepare your small bowl of shredded coconut while you wait.
5. Using your spoon, scoop out and roll the mixture into your preferred size and roll in shredded coconut until evenly coated.
6. Store in the fridge until ready to snack. Enjoy!
