Pistachio and Fig Nice Cream

Winter is steadily drawing to a close and as the weather warms, so comes the cravings of seasonal treats and cool, crisp indulgences. In our house, one of our favorite substitutes for Ice Creams and similar treats is ‘Nice Cream’! Whilst many ice cream and gelato recipes are often unfortunately packed with exceeding amounts of refined sugars, Nice Cream’s primary base is simply frozen bananas and, when made at home, can be easily sweetened to your taste with more beneficial sugars!

Nice Cream first gained attention and popularity back in the early 2010’s and for good reason! The simple banana based treat offers itself as a healthy, chilled alternative that can easily rival and compliment the most popular ice cream flavors! 

Bananas on their own are packed with vital fibers, vitamins, and potassium! This simple recipe also allows the freedom to add additional fruits, protein powders, or other supplements!

Pistachio and Fig Nice Cream

Equipment Needed

A high powered blender with a tamp or food processor. (Note: I only own a standard kitchen blender but obtained results blending on the ‘crushed ice’ settings and with a rubber spatula.)
A 8 x 5 storage container with lid.

Ingredients:

- 4 Cups Frozen Bananas (roughly 4 full bananas). (Note: Like when making banana bread, bananas that are beginning to brown will be naturally sweeter.)
- 1 Cup of Unsweetened Almond Milk
- 2 Tbsp Honey (Optional)
- 6 Fresh Figs
- ¾ Cup of Unsweetened Pistachio Butter (My Personal Choice)

Instructions:

1. Cut bananas and allow pieces to freeze fully.
2. Pit the figs and set aside. A little bit of skin left is okay! 
3. Add ingredients to the blender and pulse until smooth. The added almond milk should help get things moving, but the consistency should be like a very thick smoothie.
4. Pour Nice Cream into the storage container and freeze for at least 2 hours.
5. Once set, allow to thaw for about 10-15 minutes or until it’s easy to scoop. 
6. Serve and enjoy!
